MAY FATS INGREDIENTS:
for two persons: 25 g of bacon, one sage leaf, 125 g of dry ceci, 5 spoons
of extravergine olive oil, garlic, salt, 100 g of homemade bread, ½ bay
leaf, 3 celeries, 125 g of dry lentils, black pepper, 125 g of dry cicerchie,
125 g of dry borlotti beans, 50 g of dry chestnuts, 100 g of dry broad beans.
DIRECTIONS:
Keep
in water the night before the legumes. Warm up the oil and add the garlic, the
bacon, the rosemary, the bay, the sage. Sieve just cold. Cook the legumes separately
with celeries and aromatic water, then mix and add the bacon, salt and pepper.
Toast the bread and dress with the cream.
