OLIVES FROM ASCOLI

INGREDIENTS:

60 green olives in the brine, 150 g of beef, 100 g of bacon, 50 g of grated parmesan, 3 eggs, one nutmeg, a slice of soft bread, flour, breadcrumbs, salt and pepper.

DIRECTIONS:
Cut the pitted olives as spirales. Put in the oil the meat with the bacon for browning, then mince it. Add 2 eggs, the parmesan, the soft bread, the salt and the pepper. Stuff the olives and pass on the flour, the whisk egg and the breadcrumbs. Let it stand in the fridge per 2 hours, then fry in abundant hot oil. Dress very hot.
